Veggie quesadilla recipe with mushroom fajita using love melt.


Ingredients (2 servings)
Bean paste:
*1/2 onion
*1 clove garlic
*1 tsp olive oil
*A pinch of salt and pepper
*1 cup kidney beans cooked
*1/4 tsp cumin powder
Mushroom fajita:
*2 tsp olive oil
*1/2 onion
*1 red bell pepper
*1 pack maitake mushroom
*1/2 tsp salt
*A pinch of black pepper
*1/4 tsp chili powder
*1/8 tsp cumin powder
*1 tsp soy sauce
*1/4 cup corn kernels
1 pc Love Melt
2 pcs tortilla
Olive oil for grilling

How to make
1.Prepare the bean paste. Finely chop onion and garlic. Heat olive oil in a pan, add garlic and onion, and saute well with salt and pepper. Combine with kidney beans and cumin powder, and process in a food processor to make smooth paste.
2.Prepare mushroom fajita. Roughly slice onion and red bell pepper, and break maitake into bite size pieces. Heat olive oil in a pan, add onion, red bell pepper and maitake, and stir. Add condiments and corn kernels, put the lid on and cook until the vegetables are thoroughly cooked.
3.Thinly slice Love Melt.
4.Spread bean paste on a piece of tortilla evenly and put half of Love Melt on top.
5.Heat olive oil in a pan and place the tortilla. Put mushroom fajita and the rest of Love Melt on top then cover with another piece of tortilla. Press down.
6.Grill on low medium heat until the bottom side gets nice and crispy, turn and grill the other side in the same way.
7.Serve with some salsa and avocado slices.
